Casserole Of Swiss Chard and Gruyere

We are in full CSA (Community Supported Agriculture) Summer mode which means we are trying to cook at least 3 times a week and our fridge is full of veggies (so. much. lettuce.). Stir-fry and lettuce wraps have been our defaults for the past few weeks. I wanted to try something new but lacked inspiration. I knew that Kyo also participated in a CSA so I reached out to her to see what she was making and if she had any ideas on how to use my kale and swiss chard. She led me to this recipe, which looked delicious. Unfortunately, I did not have the time or patience for it tonight. But I was now inspired. A couple of google searches later....

I modified it a little bit and added mushrooms (because who doesn't love mushrooms?), spicy chicken sausage (the first words out of Nick's mouth when I showed him the recipe was "Where is the protein?"), and a little lot more cheese.

 It was a hit in the Fahey house! Next time, I would put in a little less sausage (don't use chorizo.. the flavor is a bit too strong). This dish would also go well paired with fish (i wouldn't put sausage in).

4th of July Weekend

What a great weekend! The greater the struggle on Monday, the greater the weekend. And I am STRUGGLIN'! It was a weekend of friends, food, and family. The 4th was on a Thursday this year which made for a semi-long weekend. Both Nick and I had to work a full day on Friday (boo!) but it began with Cronuts (more on that later) which added a little fun in an otherwise uneventful workday.

Wednesday, July 3rd

Before we set out to celebrate Uncle Sam's birthday, Nick and I had the pleasure of celebrating the marriage of two of our friends - Connie and Toshi. The venue was beautiful. It was extra sweet because Toshi's grandfather, who is a reverend, officiated the ceremony.

Thursday, July 4th

For the 4th this year, Nick and I were determined to leave the concrete jungle. Luckily, Tim and Kyo were game so we took a day trip to Watch Hill, RI. I have to say, it was pretty much perfect. We were able to find parking relatively easily, the beach wasn't that crowded, the weather was perfect, and the water wasn't too cold. And to top off a great day, we had a great seafood meal at Olympia Tea Room and yummy ice cream at St. Clair Annex. The fireworks we saw on the drive home was just icing on the cake.

Friday, July 5th
This is the line in front of us at 6:30am. There were probably twice as many people behind us.
My alarm went off bright and early at 5:45am. Aliza was crazy kind enough to agree to not only meet me in line at 6:30am but also to stand in it with me for hours for a pastry. If you haven't heard of a Cronut, click here for a quick tutorial. Basically, it is a hybrid croissant and donut and there is only bakery in the world that has them (it has been trademarked!) and people in NYC have been going crazy for them. The bakery only makes a limited number per day and had we gotten there 10 minutes later, we would not have gotten one.

While food coma-ing, I dropped off a cronut and a couple of other pastries for Nick at his office and then ran to work.

After work, Nick and I rushed to the airport to catch a flight to Charlotte to visit Nick's aunt and uncle. Nick's sister Natasha had been spending the week down there so it was good to be able to coordinate so  that we would be there at the same time.

Saturday, July 6 

Nick's Aunt Lynn and Uncle Lance have a condo on Lake Norman. While the weather was a little bit temperamental all weekend, we were able to get out on the boat Saturday early afternoon. For dinner, Nick had requested BBQ so Aunt Lynn found The Queen City Q. OH. MY. GOD. Best BBQ I have ever had (Salt Lick in Austin can NOT even compare... sorry to all my TX friends). If you ever go there, you MUST order the sausage (and I don't even really like sausage!). I promise you that you will not regret it.

 Sunday, July 7

Unfortunately, the weather decided to not be cooperative so we had to give up on our my plans to teach me how to water ski. All was not lost though. We went on a wine tour and tasting at Daveste Winery which was about 30 minutes from the condo. I love wine tasting and discovered a really cool wine that I like - Trillium
